Blackcurrant, earth, with a touch of mint. fine dusty tannins to finish.

On our site, Cabernet has a long slow ripening to produce full flavoured wine without excessive alcohol. use of two clones with differing flavour profiles provides added complexity. this wine has well intergrated oak and elegant structure.

Purple Hen 2004 Merlot. Grapes and wine locally grown and produced in Phillip Island.
Soft supple tannins, rich velvety mouthfeel. Plum and blackberry. Sparing use of French oak.
Bottled 2005
Fruit intensity has been a mark of this wine, even from the fermenting must. Restrained use of new oak has allowed the strength of fruit aroma and flavour to acrry into the finished wine. We planted merlot to partner with cabernet sauvignon and will only relaese a straight merlot when its intensity and character is particular strong. This wine provides a benchmark for future releases.

Purple Hen 2004 Pinot Noir. Grapes and wine locally grown and produced in Phillip Island.
This wine has a ripe, dark cherry, cedar and fruitcake bouquet. soft velvety palate with good length.
Bottled October 2005. Viticulture and winemaking have worked in harmony to produce a pinot of interesting complexity but clear varietal character. good intensity and length round off the package.
This wine has won the following awards Gold Medal - International Cool Climate Wine Show (Red Hill) March 2006. Trophy for Pinot Class - Gippsland Wine Show 2006.

Purple Hen 2005 Chardonnay
Purple Hen 2005 Chardonnay. Grapes and wine locally grown and produced in Phillip Island.
This wine has been barrel fermented with extended lees contract. Refined palate with balanced acidity and oak.
Bottled February 2006. This wine remained on lees for 10 months following fermentation. The use of a number of different strains of yeast plus lees stirring has added to the wine's depth, complexity and mouth-feel. Use of oak has been restrained and malolactic fermentation limited to approximately 30%.
This wine has won the following awards. Bronze Medal - International Cool Climate Wine Show (Red Hill) March 2006. Bronze Medal - Gippsland Wine Show March 2006.
